For the countertop:

Separate the egg whites from the yolks. Beat the egg whites with a pinch of salt. Rub the yolks with the sugar and gradually add water. Add baking powder, lemon and vanilla essence, orange or lemon peel and hazelnuts or walnuts.

Mix the ingredients well and then lightly incorporate the egg whites and add the flour.

Put half of the cream inside, mixing with a drop of almond essence, then sprinkle the fruit as desired. With the other half of the remaining cream, put on top, but first mixing with a drop of mint essence.

For the glaze:

Prepare the icing according to the instructions on the package, then add a drop of coffee essence. Put all the cake in the icing.

After the icing has cooled and hardened, sprinkle the coconut to give the butterfly a contour. Decorate the eyes with diced red jellies.

How to serve:

Let cool for 1 hour, then serve.
